This meal will keep the whole family happy.

Finding things to cook that are healthy and nutritious, but also don't take ages to whip up during the long, winter nights when many of us are lacking in energy isn't always easy, but Gino D'Acampo has got you covered with this sausage and bean dish.

The incredibly simple meal takes only 20 minutes to make from start to finish, so this recipe is perfect for those who are finding themselves a bit time-starved after a long day of work and chores. It's so easy to make that it's a dish that D'Acampo often opts to make when he goes camping with his family - so you won't need a lot of equipment either.

The recipe is featured in D'Acampo's cookbook 'Gino's Italian Family Adventure' which is based on the ITV television series of the same name. In a snippet posted on the TV chef's YouTube channel, he demonstrates just how easy it is to make this tasty, protein-packed dish.

Ingredients:

  • Olive oil
  • 1 tbsp chopped fresh rosemary
  • Pinch of Chilli flakes
  • 2 Red onions (finely chopped)
  • Sea salt
  • 900g Italian sausages (or alternative) chopped to 4cm chunks
  • 2 x 400g tin of cannellini beans
  • 2 x 400g tin of Borlotti beans
  • 2 tbsps tomato puree
  • 400ml hot vegetable stock

  • Fresh parsley (torn not chopped)

To start put your olive oil into the pan to heat up, before quickly adding the chopped fresh rosemary which will create a nice sizzle, then add a pinch of your chilli flakes "for a bit of a kick", D'Acampo explains.

Make sure the oil is covering the bottom of the pan to spread the flavours throughout the dish and properly infuse them. Then add your red onions to the heat with a pinch of sea salt, this will make them caramelise more quickly the TV chef notes.

D'Acampo opts for Italian sausages, but you can swap these out for any high-quality sausage, which you should pop in the pan once the onions have coloured. Next, drain the water from your tins of beans, before adding them to the pan, give it a good stir before adding two tablespoons of tomato puree "for a nice rich flavour".

Then pour in your hot vegetable stock "which is going to help the sausages to cook nicely" then tear your fresh parsley directly into the pan, and simply allow your one-pot dish to heat for about twenty minutes, with a gentle bubble, before tucking in.
