'Amazing' healthy tomato soup recipe is the perfect winter warmer this January

As the mercury continues to drop during the winter months, keen cooks will be looking for hearty, but healthy, foods to warm them up, as many have health-related New Year's resolutions.

Lauren Nichole, who posts on TikTok as @laurennicholefitness.x, shared her perfect "tomato soup and cheese toastie" recipe, which is perfect served as a decadent lunchtime treat when you're working from home.

As part of her 30-day series of healthy one-pot recipes, she listed the ingredients and the method to make the delicious soup, sharing the nutritional information too for those who are looking to be more mindful about their eating habits.

In the caption, she wrote out the instructions to make it easier for her followers, and the method is so simple. It also "does four big portions" and is only "137 calories per serving."

She told people to "chop all your veggies and pop into an oven-proof pan/pot, drizzle over olive oil, salt, pepper and add your thyme before popping in a pre-heated oven at 180 degrees for 45 mins."

Then, for the cheese toastie, you'll need to butter the front and back of the bread, "add Dijon to each inside half, followed by cheese, ham, salt and pepper."

Once the vegetables have all been roasted, "add to the hob on a low heat, squeeze the garlic out, add tinned tomatoes, stock, salt, pepper and chilli flakes (if you fancy them) before blending." Lauren explained that she used an immersion blender, but shared that you can also use a food processor. If you want it "completely smooth", you can strain it.

"Add in your creme fraiche and stir in, taste and add anything you feel it needs more of", Lauren explained. "Cook your toastie however you desire, I whacked it on the George Foreman and it came off perfect as always! I topped my soup with a dollop of creme fraiche and chilli flakes and enjoy!"

In the comments, people were salivating at the thought of the delicious soup, with one saying it looked "insane", and another saying they were going to "make it tomorrow", followed by heart-eye emojis. "Made this today and it was amazing", someone praised.
