'Comforting' broccoli and stilton soup recipe can be whipped up in 30-minutes

As temperatures start to plummet, nothing tastes better than a hearty bowl of soup and a slice of warm crusty bed in front of an open fire.

While many Brits stock up on vegetables and cheese during the festive season, there’s no better time to whip up a broccoli and stilton soup which can be enjoyed as a comforting meal or a dinner party starter. Fortunately, a self-proclaimed "amateur home cook" has revealed his delicious recipe for the comforting soup - and it’s so simple to make.

The social media star, who goes by @stopdropandcook on TikTok, kicked off the video with mouthwatering footage of the calming dish. He said: "Continuing with soup season, this is a really tasty and comforting stilton and broccoli soup." He then shared his recipe which can be found below.

Ingredients

  • Butter
  • Olive oil
  • One onion (chopped)
  • One tbsp of whole grain mustard
  • One tsp soft brown sugar
  • Salt and pepper
  • 450g broccoli (chopped)
  • 180g stilton
  • One litre vegetable stock
  • Crème fraîche
  • Bread (optional)

  • Frying pan
  • Stick blender
  • Wooden spoon
  • Jug
  • Serving spoon
  • Bowl

Method

  • To start making this hearty meal, melt the butter and oil in a pan. Then add the chopped onion, mustard, brown sugar, and a pinch of salt and pepper. Stir the ingredients on a low heat for around 10-minutes, until the onions appear golden and caramelised.
  • Next, add the chopped broccoli and fry for two-minutes, before adding the vegetable stock. Make sure the saucepan contents bubble for around five-minutes, then add the crumbled stilton and stir.
  • Take the saucepan off the heat and combine the contents using a hand blender, until the soup appears "nice and smooth". Once blended, heat through for another two-minutes.
  • Then, serve the soup into a bowl and finish off with a touch of crème fraîche and crumbled stilton. This can be enjoyed alongside warm crusty bread.

Impressed followers flocked to the comments section to share their reaction to the simple soup, as one user gushed: "My favourite soup, I’m going to make this tomorrow." Another penned: "Just happen to have all the ingredients for this! Making it now."

While a third questioned: "How many portions does this make? I live on my own - does it keep long in the fridge? Looks phenomenal." To which the creator responded with: "It will make four to five bowls. Try and eat by the next day, but you can freeze it."
