Jamie Oliver's 'easy' Boxing Day quesadillas will transform your leftover turkey

As we're all in that post Christmas Day slump, it's certain not many people will be jumping for joy at the thought of cooking today, so why not make the most of your turkey leftovers with this quick and easy quesadilla recipe? A fun twist on the classic turkey sandwiches.

There are so many popular Boxing Day recipes to make the most of your Christmas Dinner leftovers with as many opt for the classic Bubble and Squeak, but this easy and effortless dish offers something a little different for your Boxing Day treat, and the best part is that you won't be taking ages in the kitchen making it either.

The recipe, shared by legendary TV chef Jamie Oliver, ensures you don't have to spend much time in the kitchen today, you can make the most of your leftover turkey from yesterday too - and it takes just 15 minutes to rustle up. All you need for the quick and easy dish is your turkey leftovers, some cranberry sauce, camembert cheese, thyme and some tortillas.- Ready to wow your guests with something a little different this year.

"If you and the children are fed up of leftovers this is a fantastic twist on the traditional Boxing Day turkey sandwich," Jamie Oliver explained as he shared his Boxing Day quesadilla recipe on his website along with a number of different turkey recipes. The recipe can be found below:

Ingredients:

Method:

  1. Firstly, lay out four large flour tortillas and spread two tablespoons of cranberry sauce evenly over them and then shred up and divide the turkey into smaller chunks on the tortillas.
  2. Slice the camembert as thinly as you can, and spread the cheese out evenly over the turkey, and scatter with thyme leaves. Top each tortilla with another tortilla on top.
  3. Dry fry the tortillas one by one in a large frying pan over a medium heat.
  4. Once the underside is crisp and golden (about two to three minutes), gently flip over and fry for a few more minutes, then slide onto a board and cut into wedges and enjoy!
