Nothing gets the tastebuds salivating like the merest mention of a roast potato - but how often have you made your own only to be disappointed by the lack of crunch?
Everyone knows the perfect roastie achieves that exquisite balance of a golden, crispy exterior and a fluffy, tender interior - so how can such a seemingly simple task so often go wrong? Thankfully, TikToker Sam Way knows the answer, and if you follow his hugely popular recipe below, you will undoubtedly prove very popular at the Christmas dining table this year!
Ingredients
- 2kg King Edward potatoes
- Two garlic cloves
- Few springs of rosemary (stalks removed)
- Zest of one lemon
- Sea salt
- 500g goose/duck or beef fat
Method

- Preheat the oven to 200c/390F. Peel the potatoes and cut into chunks before adding to a pot of salted cold water.
- Peel the garlic cloves and crush them, then add them to the pot along with the sprigs of rosemary. Cover and bring to the boil. Cook for around ten minutes until the potatoes are fork tender, but not actually falling apart.
- Next, strain the boiled potatoes in a colander, then leave them to steam dry in it for several minutes. Then add them back into the dry pot, cover and gently shake them to fluff them up.
- Next, add the goose fat onto two baking trays and pop them both in the oven for 15 minutes.
- Add the potatoes to the oil, carefully making sure each one is lathered in the stuff. Cook them for around an hour, taking care to coat them every 20 minutes.
- Next up you need to make the rosemary salt by blending together, or finely chopping, the rosemary, lemon zest and salt.
- Once the potatoes have cooked and are a lovely golden brown colour, take them from the oven and lift out with a slotted spoon.
- Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary.
