Jamie Oliver's gluten-free Christmas pudding 'is easy to make' before big day
Nothing beats a boozy and fruity Christmas pudding.
But, many traditional recipes are laced with gluten - meaning many Brits have to miss out on the sweet treat. However, Jamie Oliver has created a mouthwatering recipe that is completely gluten-free and vegetarian.
"It may seem impossible, but gluten-free Christmas pudding is easy and great to make ahead of the day," the chef says. This recipe either makes one large or two little puddings.

- Raisins (100g)
- Chopped dates (50g)
- Sour cherries (110g)
- Mixed peel (50g)
- Currants (150g)
- Toasted almonds (50g)
- Soft dark brown sugar (170g)
- Fresh gluten-free breadcrumbs (110g)
- Cornflour (25g)
- Rice flour (25g)
- Gluten-free suet (110g)
- Assam tea or Earl Grey - cold (75ml)
- ½ tsp mixed spice
- ½ an orange
- ½ a large cooking apple
- ¼ tsp ground cinnamon
- ¼ tsp grated nutmeg
- 2½ tbsp brandy
- 1 tsp gluten-free baking powder
- 1 tbsp golden syrup
- 2 large free-range eggs
- 1 large free-range egg yolk
- 1 lime
- Butter for greasing

Method
- Mix together the dried fruits and mixed peel in a large bowl, then grate in the orange and lime zest as well as the citrus juice, tea, spices and brandy. Mix everything together then leave overnight so the flavours can 'develop'.
- The next day, grate the apple and chop the almonds. Add them to the bowl with sugar and golden syrup.
- In a separate, clean bowl, add the rice flour, cornflour, breadcrumbs, baking powder, suet and a pinch of salt. Beat the eggs and egg yolk and stir until you have achieved a smooth mix, then stir into the fruit.
- Grease a 1.5-litre pudding basin and pour in the mixture until it is two-thirds full. Cover the top with a circular piece of greaseproof paper then use two pieces of foil and secure it together with a string.
- Place an upturned saucer into the base of a deep saucepan. Sit the pudding on top of the saucer and then carefully pour in boiling water until it's halfway up the dish. Put the lid on and steam for eight hours, topping up with water as needed, always keep it halfway up the basin.
- Once steamed, remove the pudding from the pan, carefully turn it upside down then lift off the basin. Decorate as you prefer and serve with brandy cream, ice cream or custard.
Et voila! A delicious Xmas pudding suitable for anyone gluten-free. You can also make this dessert ahead of time so you're not rushing around the kitchen on the big day.
