Jamie Oliver's super quick salmon pasta hailed as the perfect mid-week meal

There's nothing nicer after a long day than tucking into a hearty bowl of pasta - and this quick salmon dish curated by Jamie Oliver is the perfect mid-week meal.

Legendary celebrity chef Jamie Oliver has shared his delicious salmon pasta on his website, and the super quick and easy dish takes under 10 minutes.

What's even better is that you can also save time on the washing up as it can be cooked in just one pan. Sure to impress your guests, the dish uses lasagne sheets instead, to give it a rustic twist as well as zingy flavours to win anyone over.

The simple recipe only needs a few ingredients to create the tasty meal, and the full recipe can be found below. This is a serving for one adult.

Ingredients:

  • 125 g fresh lasagne sheets
  • 2 spring onions
  • 80 g spinach
  • 60 g smoked salmon (2 slices)
  • ½ a lemon
  • 5 g Parmesan cheese
  • olive oil
  • 1 tablespoon cottage cheese
  • optional: extra virgin olive oil

Method:

To start with, cut the lasagne sheets lengthways in half, and then into 2cm strips. If you have a crinkle-cut knife it will give the pasta an even more rustic appearance. Trim the spring onions and chop finely along with the spinach. Chop up half of the salmon and combine together with the spring onions and spinach. Separately, grate the lemon zest and the parmesan.

Put a large frying pan on high heat and drizzle with olive oil and add in the spring onions, spinach, chopped salmon and lemon zest. Next, place the pasta in the pan and pour boiling water into the pan so it just about covers the pasta - roughly 250ml.

Let it bubble for around four minutes, or until the pasta has absorbed the majority of the water and you've got a sauce in the pan, and add more water if needed - remember to also stir regularly.

When you are happy with the sauce, turn off the heat and squeeze in the lemon juice and stir in the cottage cheese and grated parmesan. Season with salt and pepper to your required taste and tear over the remaining salmon, and garnish with another drizzle of olive oil. Serve it up into a bowl and enjoy!
