Ingredients

Before cooking gets underway, Gino has one important instruction. "When you do this recipe, chefs will say to you 'put the oil in a pan, put it on the heat, when oil is hot add ingredients'.

"We are not doing this when we do aglio olio e peperoncino [garlic, oil and hot pepper] because otherwise the garlic will burn. The way we do it is put oil in the pan cold - this is a good tip, so remember - oil goes in cold."

Method

Bring a large pot of water to the boil. When boiling add a good pinch of salt. Boil your spaghetti for one minute less than the packaging suggests to ensure al dente cooking.

Pour the extra virgin olive oil into a large, high sided frying pan or saute pan and add the garlic, chopped parsley, chilli flakes and fresh chilli. Turn the heat to medium high and stir as the ingredients begin to sizzle. Let the ingredients fry for about 1 minute then remove from the heat.

When the spaghetti is cooked, return the frying pan to a medium heat. Transfer the pasta to the pan without draining, using tongs or a spaghetti spoon. Stir for 30 seconds to allow the flavours to combine. Serve immediately - voila!

If you're feeling inspired by Gino's simple pasta dish, you should also check out his recipe for carbonara. He's shared his definitive recipe for one of his best-loved dishes in his Gino's Italian Kitchen series and it only needs four ingredients.

He said: "To Italians nothing is more important than family and food. In this series I want you to see Italian food through my eyes for its simple ingredients, impressive results and fantastic flavours."
